Avocado Corn Soup Recipe

This is a terrific Mexican soup that your whole family will enjoy, and you’ll only need a few basic ingredients. It’s easy to make, and super delicious. This recipe yields 4 servings.

Ingredients:

  • 1 can chicken broth
  • 2 avocados; peeled, pitted, and cut in half
  • 1 can korn kernels
  • 1 tablespoon lime juice
  • mint, cilantro, or basil leaves to garnish
  • salt to taste

Directions:

  1. In a blender, add half-cut avocados, broth, lime juice, and salt. Blend until smooth.
  2. Pour mixture into medium saucepan and stir in corn.
  3. Cook over medium-high heat, stirring occasionally, until just steaming.
  4. Garnish with your choice of herbs and sprinkle in salt and pepper to taste.
