Avocado Corn Soup Recipe
This is a terrific Mexican soup that your whole family will enjoy, and you’ll only need a few basic ingredients. It’s easy to make, and super delicious. This recipe yields 4 servings.
Ingredients:
- 1 can chicken broth
- 2 avocados; peeled, pitted, and cut in half
- 1 can korn kernels
- 1 tablespoon lime juice
- mint, cilantro, or basil leaves to garnish
- salt to taste
Directions:
- In a blender, add half-cut avocados, broth, lime juice, and salt. Blend until smooth.
- Pour mixture into medium saucepan and stir in corn.
- Cook over medium-high heat, stirring occasionally, until just steaming.
- Garnish with your choice of herbs and sprinkle in salt and pepper to taste.
