Mexicali Cornbread Casserole

A delectable Mexican recipe perfect for any time of the day! This authentic Mexican dish is best served with corn muffin and Iced tea. This recipe yields  3- 4 servings.

Mexicali Cornbread Casserole

Ingredients

  • 1 1/2 cups cubed ham
  • 2 1/2 cups frozen mixed vegetables, thawed
  • 1 package (10 ounces) cornbread stuffing mix
  • 1/2 cup (2 ounces) shredded taco-flavored cheese
  • 3 eggs, lightly beaten
  • 2 cups milk
  • Salt and Black Pepper, to taste

Directions

  1. First, preheat oven to 375 F. Combine mixed vegetables, Ham and stuffing mix in small casserole; set aside. And then, combine milk, eggs, salt and pepper in medium bowl; pour over ham mixture. Bake covered, 45 minutes.
  2. Next, top with cheese; bake, uncovered, 3 minutes or until cheese is melted.
  3. Mexicali Cornbread Casserole is ready to serve!
