Mexicali Cornbread Casserole
A delectable Mexican recipe perfect for any time of the day! This authentic Mexican dish is best served with corn muffin and Iced tea. This recipe yields 3- 4 servings.
Ingredients
- 1 1/2 cups cubed ham
- 2 1/2 cups frozen mixed vegetables, thawed
- 1 package (10 ounces) cornbread stuffing mix
- 1/2 cup (2 ounces) shredded taco-flavored cheese
- 3 eggs, lightly beaten
- 2 cups milk
- Salt and Black Pepper, to taste
Directions
- First, preheat oven to 375 F. Combine mixed vegetables, Ham and stuffing mix in small casserole; set aside. And then, combine milk, eggs, salt and pepper in medium bowl; pour over ham mixture. Bake covered, 45 minutes.
- Next, top with cheese; bake, uncovered, 3 minutes or until cheese is melted.
- Mexicali Cornbread Casserole is ready to serve!
