Pork with Roasted Peppers and Potatoes
A mouth-watering Mexican dish with golden pork chops spiced up with roasted red pepper and sizzling spices. This recipe yields 3- 4 servings.
Ingredients
- 4 boneless pork chops, 1/2 inch thick
- 1 cup Swanson® Chicken Broth (regular, Natural Goodness™ or Certified Organic)
- 4 medium red potatoes, cut up
- 1/2 cup diced roasted red pepper
- 1 medium onion, sliced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano leaves, crushed
- Ground black pepper
Directions
- First, season chops with black pepper.
- Next, heat oil in nonstick skillet. And then, add chops and cook 10 minutes or until well browned. Remove chops.
- After that, add potatoes, onion and oregano. Cook 5 minutes or until browned, stirring occasionally.
- Lastly, add chops, broth and peppers. Heat to a boil. Cover and cook over low heat 10 minutes or until done.
