Pork with Roasted Peppers and Potatoes

A mouth-watering Mexican dish with golden pork chops spiced up with roasted red pepper and sizzling spices. This recipe yields 3- 4 servings.

Pork with Roasted Peppers and Potatoes

Ingredients

  • 4 boneless pork chops, 1/2 inch thick
  • 1 cup Swanson® Chicken Broth (regular, Natural Goodness™ or Certified Organic)
  • 4 medium red potatoes, cut up
  • 1/2 cup diced roasted red pepper
  • 1 medium onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano leaves, crushed
  • Ground black pepper

Directions

  1. First, season chops with black pepper.
  2. Next, heat oil in nonstick skillet. And then, add chops and cook 10 minutes or until well browned. Remove chops.
  3. After that, add potatoes, onion and oregano. Cook 5 minutes or until browned, stirring occasionally.
  4. Lastly, add chops, broth and peppers. Heat to a boil. Cover and cook over low heat 10 minutes or until done.
