Savory Vegetable Beef Soup

An authentic Mexican soup recipe that brings out the delicious tang of beef and juiced up with Mexican spices and veggies. This recipe yields 5- 6 servings.

Savory Vegetable Beef Soup

Ingredients

  • 1 cup cubed cooked beef
  • 3 cups V8® 100% Vegetable Juice
  • 1 3/4 cups Swanson® Beef Broth (Regular, Lower Sodium or Certified Organic)
  • 1 (16 ounce) bag frozen mixed vegetables
  • 1 (8 ounce) can whole peeled tomatoes, cut up
  • 2 medium potatoes, cut into cubes
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon dried thyme leaves, crushed

Directions

  1. First, place broth and potatoes in saucepan. Heat to a boil. Cover and cook over low heat 5 minutes or until potatoes are tender.
  2. Next, add beef, vegetable juice, tomatoes, vegetables, thyme and black pepper.
  3. Lastly, cover and cook 15 minutes or until vegetables are tender.
  4. Savory vegetable Beef Soup is ready to serve!
